Oisín Rogers and Flat Iron founder team up to open ‘dream pub'

Oisín Rogers, previously the much lauded landlord of the Windmill in London's Mayfair, has partnered with Flat Iron founder Charlie Carroll to open the Devonshire pub and restaurant in London's Piccadilly Circus this autumn.

The building, which first opened as an inn in 1793, has been transformed into a downstairs pub and an upstairs restaurant, complete with a "highly ambitious" wood-ember grill that the duo have been discussing for years.

The Devonshire will source beef directly from Scotland, which will be dry-aged and butchered on site into trimmed rib chops, fillets, and skirt, which will be used in a Guinness and beef skirt suet puddings.

Seafood for the grill will come from all over the UK, including creel caught langoustines from Oban and hand dived scallops from Devon.

There will also be an in-house bakery to supplement the selection of homemade bar food, which will feature sausage rolls.

A three-course menu offering the likes of prawn and langoustine cocktail, steak and chips and sticky toffee pudding, will be available at both lunch and dinner sittings

Carroll said: "Osh and I have been talking about our dream pub for almost a decade; somewhere warm, welcoming and accessible to all, where the team really care about looking after you and about the quality of each and every bit of food and drink served. I can't wait to have a pint and a homemade bacon sarnie."

Rogers added: "I am delighted, excited and fortunate to be working with Charlie at full tilt on this. I can't wait to be back behind the bar pulling pints again when we open in the autumn."
