A chilling approach
A radically new approach to glass chilling launched by Chilled Concepts differs from shelf-type freezers by subjecting each glass to a quick burst of liquid carbon dioxide. The unit is mounted on the bar counter alongside the drinks dispense pumps and staff simply place each glass to be chilled over a spray head and press a button.
Chilling takes 4-8 seconds and can be carried out in the time it takes to remove a cap from a bottle or pull a cork. The spray freezes the outside of the glass, with no water mixing with the drink. Chilled Concepts says glasses chilled this way cannot burn or stick to the hands or lips and cannot cause loss of beer head.
No damage should occur to glasses in normal circumstances but it is not recommended to use it with hot glasses direct from the dishwasher.
The unit is priced at £550, including installation and one-year warranty, or can be obtained on a three-year lease purchase scheme. Cost of the carbon dioxide gas, which is supplied in cylinders, works out at about 1p per glass.
A standard 9.4kg cylinder chills approximately 200 glasses. (Liquid CO2 is not the same as the carbon dioxide gas used to carbonate soft drinks, which is mixed with nitrogen).
