British world cuisine

While ethnic cuisine has taken Britain by storm, there are still some customers who fancy traditional British grub such as bangers and mash, roast lamb, roast beef, steak and kidney pie and, of course, fish and chips!

Meat

Brake Bros: Boneless Loin of Lamb, a ready-prepared lamb cut from Brake Bros, trimmed to remove all the silverskin and fat, which saves preparation time.

It is fast to cook and versatile as it can be pan fried, served en croute, stir fried, served in fajitas or kebabs or simply roasted, sliced and fanned on the plate with a sauce for an impressive presentation.

Each 116g to 170g loin costs £2.23 (packed in 16s).

Bernard Matthews: 1.5kg ‘cook from frozen' natural Boneless Basted Turkey Breast can be cooked from frozen in its roasting bag, in about two and a half hours at 190 degrees C. It is suitable for carveries to serve in front of customers, as it is easy to carve. Available in 2 x 1.5kg joints per case.

The new MiniRoast version of the Easycarve Norfolk Turkey joints weigh 2.72kg each. Like the 4kg versions, they are in two styles - Norfolk Turkey Breast and Norfolk Turkey Breast and Thigh. Both are supplied in roasting bags and can be cooked straight from frozen.

Bernard Matthews: a collection of four New Zealand lamb cuts, under the Fine Dining brand.

The Four Rib Lamb Rack is available at an average weight of 185g. It is easy to handle as it is frozen in vacuum packs of two, in seven packs to a case. The Rib can be presented as a four rib rack or cut into cutlets.

The Boneless Lamb Loin can be used in a variety of recipes - pan-fried or en croute. All fat and silverskin has been removed and there are four 116-169g loins per vacuum pack, with four packs to the case.

The Lamb Hind Shank can be used as the main ingredient in dishes such as Greek kleftiko and can be served braised with garlic mashed potato and a rich redcurrant sauce. Each Shank weighs 350g to 450g. Available vacuum-packed in twos, with four packs per case.

Lamb Chump Steak is an original cut and is an alternative to steak. It can be cooked and presented as it is supplied or, for example, cut into a "fan" for a more stylish presentation. Pan-fried, griddled, oven baked or even combi microwaved, it offers a variety of choices of presentation. Each Chump weighs 200g to 250g. Individually vacuum packed in cases of 12.

Roast Leg of Spring Lamb with Stilton and Raspberry Stuffing; Smoked Salmon and Stilton Timbales with Horseradish; English Apple, Stilton and Toasted Sesame Salad are just some of the recipes available in a new free recipe and information pack from the Stilton Cheese Makers Association.

Manor Born: Speciality sausages, dry cured bacon and traditional hams.

Vale of Mowbray: pork pies and sausages.

Sauces

Van den Bergh Foodservice: sauces under the Garde d'Or brand. The sauces are a concentrated liquid that can be added to stock, water or any other hot liquid and simmered for two minutes to provide a good sauce base.

All the sauces are in 1 litre bottles and make the following quantities: Brown base (1 litre bottle makes seven litres); Cheese; Curry, (both of which make five litres); Hollandaise; Tomato (both of which make three litres); White base sauce (six litres) and White Roux (10 litres).

Main meals

Jugg Foods: ready-made meals - Steak and Mushrooms in Peppercorn Sauce - strips of rump steak are mixed with mushrooms and onions and simmered in a creamy peppercorn sauce with a dash of brandy and white wine.

Supplied in a 1.7kg (60oz) multiportion tray, the cost is £1.75 per serving. Simply serve with rice or with roast potatoes and vegetables.

Other dishes: Chicken and Vegetable Casserole Pie in a six portion tray and Mushroom Stroganoff in individual 284g (10oz) portions.

Kepak Buchan: Highlander Beef Burgers are produced, using prime Scotch Beef, with full traceability from farm gate to plate. The range includes a premium beef burger; a Charbroil burger, developed for charbroilers; a seasoned beef burger with subtle seasoning; Blue and White - a seasoned beef burger with a hint of onion; Special Scotch, a burger seasoned with onion and Economy which contains beef with cereal, soya and seasoning. All burgers are in 4oz and 2oz, except the Premium which is 4oz. Colourful point of sale material is available.Emile Tissot: the range of nine dishes includes Pork and Cheese Crunch; Peppered Pork Casserole; Lamb with Mint Hollandaise; Steak and Kidney Pie and Pork and Leek Sausages in Mustard Sauce.

Orkney Herring Company: marinated salmon with raspberry and champagne sauce; marinated salmon with honey mustard sauce.

Castle MacLellan Foods: fresh, chilled soups - Shetland Isles Crab Soup with Tarragon and Ginger; Spicy Shetland Soup with Lemongrass and Coriander; Salmon and Cauliflower Soup and Shetland Seafood Bouillabaise. The summer range comprises Salmon and Asparagus, Light Spicy Prawn, Light Lobster Bisque and Fresh Shetland Seafood Soup.

Framptons: frozen omelettes can be served for breakfast, lunch or a light snack as they only require reheating. A selection of fillings is available. Also boil in the bag scrambled egg, and pre-cooked egg patties.

Brake Bros: create a truly English menu with farmhouse pate; Lancashire Hot Pot; Topside Joint with baked individual Yorkshire Puddings and Traditional Roast Potatoes. For dessert: Spotted Dick and dairy custard and Bakewell Tart.

Vegetables

Brookerpaks: ready prepared vegetables include scallop and nugget potatoes, whole, sliced, and diced beetroot (natural and in vinegar), large sweetcorn, whole beetroot and sliced beetroot and vegetable medley (potatoes, leeks, carrots and swedes), as well as apple and pears.

The products require no washing or peeling and can be served cold or heated through in minutes. They can be stored in their original packaging at ambient temperature, which saves fridge space. Available in 2kg packs.

Chips with every thing

Brake Bros: Seasoned Fries, coated in a southern fried batter, which can be deep fried or oven baked. Add variety to the menu with different types of chip such as Seasoned Criss Cross Fries and Twister Fries, which can be served as part of a Combo Meal, while Seasoned Wedges can be served with dips and Seasoned Fries Diced and Slices will be popular among younger diners. All the Seasoned Fries range are in 4 x 2.5kg packs.

Lord Chips: pre-fried products such as traditional chips, as well as steakhouse chips and potato slices. Pre-cooked potato products include potato dices and potato wedges, as well as potato slices with bacon and onion and a gratin dauphinois - potato slices in a cream sauce.

Farm Frites: A new coated fry, which means that the french fry stays hotter and crisper longer.

Lamb Weston: the Private Reserve chip retains the natural flavour of the potato; Stealth Fries; Freeze Chilled Chips offer an assortment of six different sizes; Twister, an American style chip. Vary your menu by offering one or two different types of chips such as Twisters, french fry coils, that add a twist to a meal and CrissCuts, lattice products with a double ridge shape. They are available plain or coated with a savoury seasoned batter; Seasoned Fries, long, crispy fries with a savoury seasoned coating, can be cooked just like regular fries and Wedges are available with the skin on or off.

McCain: ‘A-Grade' Frozen Chips; ‘Freeze Chilled' and ‘Fresh' chips; Southern Fries can be served as an alternative main meal accompaniment, in a combo, or as a starter or snack with dips.

Snacks

Farm Frites: Frozen Crisps, the UK's first frozen crisps, according to makers Farm Frites, deliver higher gross margins than traditional bags of crisps - a 7.5kg case of Farm Frites Crisps will produce 90 2oz portions and a portion takes three minutes from frozen or chilled to prepare and serve.

They can be served on their own, to finish off sandwiches, ploughman's or baguette or to accompany a tasty dip.

Walkers Shortbread: synonymous with shortbread, the newest product is organic Wheat'n'Oat biscuits in a two biscuit pack. Packs supplied in cases of 60.

Highland Country Foods; whisky flavoured salami, cured bacon, hams and cooked meats.

Johnstones Just Desserts: caramel shortcake made in Scotland.

General

Gordon's Fine Foods: 17 different mustards including English Vineyard; chutneys; sauces such as cranberry sauce and marmalades.

Nestle Food Service: Traditional British fare like roast lamb is normally served with lashings of gravy. This can be prepared in minutes with the Maggi gravy range at an average cost of 24p per litre.

There are two varieties to suit different types of meat: serve Maggi Original Gravy with dark meats; Golden Gravy with white meats or for vegetarian dishes, as it is suitable for vegetarians and vegans.

Here are some suggestions on how to serve the new Maggi gravy products:

  • Liven up a roast lamb dinner by flavouring Original Gravy with some fresh rosemary and redcurrant jelly;

  • Serve spring chicken with Golden Gravy flavoured with freshly chopped thyme;

  • Braise lamb steak or chops in Original gravy with freshly chopped mint and baby vegetables such as carrots, leeks and shelled broad beans. Serve with new potatoes.

  • Make chicken, lemon grass and vegetable soup by adding carrots, celery, cooked sliced chicken, shelled broad beans, peas and lemon grass in Golden Gravy made into a light stock and garnished with fresh coriander.

Desserts

Waldrons: individual puddings Hot Chocolate and Orange Pudding and Hot Toffee and Pecan Pudding from Waldrons can be served from freezer to table in under a minute, as they only take a few seconds in the microwave.

Ice cream

Bird's Eye Walls: under the Carte d'Or brand, flavours include Vanilla Toffee Crunch and Vanilla Chocolate Cookies Ice Cream, as well as a Pineapple Sorbet.

Yorvale: Raspberry ice cream cheesecake and Fig ‘n Brandy are the latest flavours to join Yorvale's portfolio of 21 ice creams. Other flavours include dairy vanilla, fruit flavours and rich chocolate.

What a sauce

Universe Foodservice under the Macphie brand dessert sauces and fruit coulis: Creme Anglaise, a traditional custard sauce; Brandy Sauce, made with French brandy; Toffee Sauce; Butterscotch sauce and vanilla sauce; White Chocolate Sauce; Continental Dark Chocolate Sauce and Chocolate Sauce. All these dessert sauces can be blended with fresh or frozen fruit and fruit purees.

Supplied in 12 x 1 Tetrapaks with 12 months' ambient shelf life.

Glanbia Food Service: Windsor Red a dramatic looking cheese infused with elderberry wine, available as 1.25kg half wheels at £11.46 and Charnwood, smoked cheddar coated in paprika, available as 1.25kg half wheels at £11.46.

St Ivel: Classy cheddars, Stiltons and a wide range of specialist cheeses are available from this well known name either in catering blocks or single service portions.

Dairy Crest Foodservice: May saw the launch of Dairy Crest Foodservice. The new division supplies a comprehensive range of cheese, spreads and milk.backed up by a recipe service and ideas on how caterers can make greater profits from their dairy products. Around 120 lines will be offered initially.

Drinks

Belvoir Fruit Farms: cranberry cordial, cranberry presse and lime and lemongrass presse.

Bottle Green Drinks: various presses including Elderflower, Ginger and Lemongrass, Spiced Berry, Limeflower and Citrus.

Celtic Spirit Co: traditional Welsh liqueurs such as Black Mountain Liqueur and Danzy Jones whisky liqueur.

Ballard's Brewery Ltd: bottled conditioned beers such as Nyewood Gold and Wassail; draught beers like Trotton Bitter and seasonal draught beers such as Midhurst Mild and Wheatsheaf.

Carr Taylor: various sparkling wines in Vintage, Non Vintage; still wines in Alexis, Vessel IV; regional wines such as Hastings Wine and Fruit Wines such as Blackcurrant Bliss.
