Broome back in business to ‘re-create the classics'

FORMER Michelin-starred chef Kevin Broome, forced by cash-flow problems to close his Jersey hotel and restaurant the Lobster Pot at Christmas 1997, has resurfaced as the chef of the Green Room restaurant, opening next month in Belper, Derbyshire.

The Green Room, so-called after the name for a lounge in a TV or radio studio where visitors are wined and dined, marks the restaurant debut of former TV director Donna Goddard and partner Mike Morley, head of current affairs and features at Carlton TV.

Unsurprisingly, the 50-seat restaurant will have a strong TV theme, with film-style lighting and lavatories styled like dressing rooms.

Broome, who won a Michelin star for his Shai restaurant in Jersey in 1995, said that he planned to "re-create the classics", offering something "quintessentially British with a twist". Baked dishes, which Broome believes have been neglected, and fish will feature prominently.

Broome has been working as a consultant and doing private catering.
