CASTING NASURTIUMS

MALCOLM Emery (pictured left), executive chef with Gardner Merchant Town & County, was at London's Chelsea Flower Show this week illustrating the attractions of cooking with flowers.

Some 3,000 nasturtiums and other edible blooms such as pansies and marigolds were served up at the show.

Dishes prepared by Mr Emery included baby lobster with nasturtium salad served with mango cream.

On Monday, Town & County's busiest day, he catered for more than 6,000 people at 14 different functions. At the gala evening over 80,000 hand made canapés were served to 5,100 guests.
