Char toppers
USED widely by restaurant chains in the USA, the Baker's Pride Radiant Chargrill is made in two versions: the XX Series of countertop units and CH Super Heavy models, designed to be enclosed in brick, masonry or ceramic tiles to present a "charcoal pit" effect, or alternatively mounted on legs and castors.
Models have a 24in deep chargrilling area and can be specified in sizes up to 120 inches wide. The radiant grilling system consists of V-shaped cast iron pieces which sit above the gas burners and glow red hot. When fat falls onto the radiants, it burns and creates the desired flare-up in a similar way to lava rock systems.
The grills are fitted with heavy cast iron top grates with grease channels to help prevent food from sticking and excessive flare-ups. Tilting grates are fitted as standard and enable rare, medium and well-done steak orders to be handled simultaneously.
