Henrik Iversen, head chef at Quaglino's in London, beat five other finalists in a cook-off at the Meat and Livestock Commission's catering development kitchen in Milton Keynes on 18 June to become the first CST Elite Chef of the Year.

His dish of fillet of beef "bonfire" with truffled mash, vegetable crisps and Madeira jus won praise from the judges - who included Brian Turner and representatives from organisers CST and British Meat - and wins him an all-expenses-paid trip to Venice, and a set of knives.

Runner-up was Christopher Basten of the Ritz Club and in third place was David Dent of the Park Lane Hotel.
