The theme of the next day is "Winning solutions". Caterer & Hotelkeeper editor Forbes Mutch will present the current Hotelier of the Year Robin Hutson, who founded Hotel Du Vin, to give the opening address.

Subject for day two include property management, people management and managing the environment. Speakers include Julia Sibley of the Savoy Educational Trust; Malcolm Moss, shadow minister for the arts and tourism; and Bob Cotton of the British Hospitality Association.
