Phase is a long-established product in the conventional fats and oils market, but it has now been joined by an oil-based product designed specifically to help browning in combi-ovens. Combi-Phase is based on sunflower oil and, when applied to meats, fish or vegetables, eliminates the need to pre-seal and brown food in order to get a golden surface finish. Application is either by spray, dipping or brushing, and because Combi-Phase will work at low temperatures, delicate items such as fish or poultry can be browned at lower heats, which helps reduce cooking weight loss and retain moisture. While primarily aimed at cooking protein, Combi-Phase will work on items such as the mashed potato topping on cottage pies or crispy brown roast potatoes.
