Herts puts alligator steaks on the menu

A touch of America's Deep South is coming to Potters Bar, Hertfordshire, with the opening of a 100-seat Cajun restaurant and bar.

Herts, as the eaterie will be called, is set to open this month under the joint proprietorship of Eric Clarke and Paul Davies, who also owns the Antelope pub in High Wycombe, Buckinghamshire.

Mr Clarke, who is from Liverpool but has worked in the USA and Canada for more than 20 years, has already experimented with Cajun menus in the UK, most recently at the Twenty Pence Inn near Ely, Cambridgeshire. He claims to have found that the British have a taste for alligator and crocodile, two of the restaurant's delicacies.

The menu at Herts will also feature dishes called Jurassic Ribs and Chicken With An Attitude. Average spend per head is expected to be £20, including wine.

"Herts is going to be a funky restaurant/bar, appealing to 25-year-olds and upwards," said Mr Clarke. "But the food is not just about gimmicks, it is real food and very nutritional."
