Job title: Head waiter, Mosimann's

First job in hospitality? At the age of 14, I began working at weekends in my uncle's coffee shop in Austria.
How did you get from there to your current job? While studying at college, I took holiday jobs in various hotels and restaurants to gain experience.
I worked as as a chef de rang in Linz, Austria, and during my time there Mosimann's was recommended to me as a good career move.
While working at Mosimann's, I won the award for Young Waiter 2002.
What are your main responsibilities? Assisting the club manager with the day-to-day running of the restaurant, together with involvement in developing and training the team of staff.
What do you most enjoy about your job? Working as part of a team, serving guests to the best of our abilities and the joy of guests leaving happy and contented after a wonderful lunch or dinner. Mosimann's is a private members' club, so it is particularly interesting to meet people from all walks of life. The service team is quite international, so working with people from different nationalities and cultures is a great experience.
What do you most dislike about your job? There's the occasional frustration of doing our absolute best but not meeting a customer's expectation.
What attributes do you need to do your job? A firm product knowledge, a good sense of humour and service with a smile: all these qualities are needed to be a great professional.
What would be your next move? I am being groomed by the club manager to assume the assistant manager position.
What would be your ultimate career move? No matter what direction my career takes me, I want to be as enthusiastic, happy and content as I am at the moment.
