Llandrillo celebrates success

The team of students from the School of Food and Hospitality Management at Llandrillo College, Colwyn Bay, used a gourmet evening at the college earlier this month to re-create the menu that won them a gold medal at the Stichting Europa Culinair International Cookery Competition, held in January in Maastricht, the Netherlands.

Team members Mandy Fletcher, Susan Leacy and Bethan Matthews topped the poll of the 12 competing European teams by attaining the highest marks in the competition with their menu, which had to be prepared, cooked and ready for service in two-and-a-half hours.

It consisted of cold eel pâté followed by veal olives stuffed with chicken liver forcemeat and finished with a soufflé omelette perfumed with vanilla.
