Maule aims for repeat business

Brian Maule's 70-seat Glasgow restaurant, Le Chardon d'Or, opened last Friday. The restaurant is in the business district of the city, and Maule hopes that if workers use the restaurant at lunchtime they will return with their families and friends in the evenings.

Despite the large number of Glasgow restaurant openings in the past 18 months, Maule does not believe he has any direct competition: "Too many restaurateurs buy a business and then send someone else in. I'm going to be here every day," he added.

Lunch costs around £10 to £15, and dinner is £30 to £40, including wine.

Maule bought the leasehold of the former site of the City Brasserie for more than £125,000 in early March. Agent Christie & Co handled the deal. Maule's previous employers, the Roux brothers, have backed the restaurant, and other shareholders include Francis Mackay, chairman of Compass, and Sir David Scholey, of investment bank UBS Warburg.
