Michelin-starred Neil Forbes moves to Glasgow's Nairns

The head chef of the Michelin-starred Braeval Old Mill in Aberfoyle has left to help the restaurant's former owner, Nick Nairn, take his Glasgow restaurant beyond the brasserie league.

Neil Forbes has taken over the cooking at the 80-seat Nairns restaurant in Glasgow. Nairn is looking for a second site in Scotland to open a brasserie-style restaurant, but said he wants to aim for a "higher level" of food.

"I don't want to say we are aiming for a star. The food will still be simple, but better," he said.

The 35-seat Braeval has been sold by Nairn's estranged wife, Fiona, to Andrew Carter, father of commis chef Sam Carter. It is understood that the restaurant is to become a coffee shop.
