Does the UK hospitality industry pay enough attention to the security of its employees and customers?
Everyone has learnt to be aware about suspect packages from going on holiday and travelling on public transport, and the industry can only emphasise that awareness.

Our industry is more aware of the threat of terrorism than many other industries, because it is part of the tourism industry. It now has to be more aware and do more - we are living in a different time to five years ago. If we like it or not there is a very real security threat.

Commercial restaurants are reasonably aware of security. With the current climate they could do more, but it's a tricky balance to be made. If you're walking into a smart restaurant you may not want to be searched. Such measures could end up alienating customers. Contract caterers are in a different position, but even though security is generally client-driven, I do think caterers should take more responsibility.
