Robinson quits Tresanton

Chef Peter Robinson has left his position as head chef of Cornwall's Hotel Tresanton to pursue his ambition of setting up his own business.

Robinson left the St Mawes hotel on 23 November after a two-week handover to his successor, Paul Wadham (formerly head chef of London's Mash), and has been looking at a number of pub properties in the Cotswolds with the aim of setting up a pub-restaurant.

"I've always wanted to work for myself and the pub option is the most affordable route - also, my wife's from a pub background so it seemed an obvious way to go," said Robinson, who confirmed that he had considered half-a-dozen sites in the Gloucestershire area.

It is believed that the Robinsons will be going into business with two backers, although this has yet to be confirmed.

The couple anticipate putting around £45,000 of their own capital into the venture, and hope to be able to open up their business in January.

Robinson headed the kitchen for nearly two years at Tresanton, after joining the hotel in January 2000.
