Silver success
The British team which competed for the Epicurean World Master Chefs International Gold Platter Award held in Limerick last month, finished second in the competition.
This was despite having to start work one hour and 45 minutes later than their rival teams because of a mix-up with their mystery basket of ingredients.
Led by team captain Richard Manzano, the British chefs created a banqueting menu for 103 people. It included chicken liver parfait wrapped in Limerick smoked bacon, velouté of local oysters and sweetcorn with crusted prawns, Kerry beef with roasted vegetables, bubble and squeak, and a dessert of tangerine mousse with strawberry coulis.
