Smith leaves the Ritz for a new challenge

DAVID SMITH, former executive sous chef at the Ritz hotel in London, joined the Stafford hotel in the capital this week as executive chef.

Smith started at the Ritz in October 1998 as premier sous and was promoted to executive sous two years ago.

The Stafford has 80 bedrooms, a 50-seat restaurant, two 12- to 15-seat private dining rooms and a 350-year-old cellar seating 40.

Smith, who is in charge of a team of 14 chefs, said he had been looking to leave the Ritz for some time. He said: "It is time for me to make it and fulfil my own challenges."

Smith has been replaced at the Ritz by the hotel's former sous chef, MARK JOHNSON.
