Theatre-style line-up
THE Ramside Hall Hotel in Durham has replaced its self-service carvery and hot buffet with an array of theatre-style cooking equipment within a light Mediterranean theme. The line-up now includes a Rotisol rotisserie to handle legs of lamb, chicken, beef joints, salmon, pork and duck plus an Olympia wood-burning oven with independently operated chain driven vertical spit.
This allows larger pieces of meat including suckling pigs to be cooked. Other equipment at the 600 covers per day restaurant includes induction woks, char-grills and a salamander.
