Colour-coded control DXc deck ovens from Mono are available in four or five deck versions with three trays per deck. The computerised Colour Controller provides a much larger, full colour screen than previous models, enabling staff to monitor bake progress from a distance with longer menu names, larger text and faster scroll-through.

Individual bars on-screen change colour to reflect temperature profile, time countdowns, etc. At the end of a bake, an audible alarm sounds and a graphic is displayed, giving the baker the option of finishing the bake or selecting additional bake time. The ColourSmart controller, which can also be fitted to BX bake-off ovens, has a seven-day on-off timer which can get the oven up to temperature automatically before staff arrive. When moving between products where there is a large temperature gap, the intelligent controller is able to switch the deck to rapid recovery to reduce downtime.

Bake to order A range of gas and electric convection ovens suited to bake-off and regular baking is available from Blue Seal, including Turbofan electric convection ovens in E25, E26 and E27 variations, with volumes of 0.05, 0.08 and 0.1 cu metres respectively. Features include drop-down door, stainless steel top and sides, enamel interior with light and a fully enclosed motor at the rear of the unit.

Further up the scale, the Turbofan G32M gas convection oven features an exclusive infra-burner and cook-and-hold facility. Internal dimensions are 460mm wide x 520mm high x 660mm deep. The similarly sized G32Max variant is electrically heated with bidirectional reversing fan system.

Input from the high street Greggs plc, Britain's largest high street bakery/sandwich takeaway chain, was closely involved in the development of Foster's current refrigeration equipment for retail bakery applications, which includes cabinets and counters based on the award winning Premier design as well as retarder-provers and coldrooms.

Recent investment of over £5m at Foster's manufacturing plant has gone hand-in-hand with transformation of the company's bakery and retail division from a small department to a core business unit.

Snack in a box modular system The Snack-in-a-Box modular system, which was launched in a 2001 as a self-contained mini-bakery concept for retail stores, continues to widen its potential with modular add-ons which make it possible to produce pizza, pasta, beverages and various fast food products within 7.5-9 sq metres of front-of-house space.

Units, which can be delivered to site and assembled within a claimed five hours, can be customised with a storage freezer, griddle, rotisserie, microwave oven, french fry vendor, hand wash sink, insect killer and clock. Impressive.

Precise portioning The Spezzatrice P30 dough divider made by Italy's Velma enables any type of dough mix (especially pizza) to be portioned precisely. The unit, which has a 30 litre tank capacity and hourly output of up to 280kg, can be linked directly to the PA300 former, enabling round pizza bases to be produced at rates of up to 4000 per hour. A system combining the two units in an integrated way costs £4,950.

Avoids RSI Dough production equipment from Bakers Pride Europe includes Bottene heavy duty spiral dough mixers from 12 to 48 litres raw dough capacity and Somerset countertop dough rollers.

The latter flatten and extend the raw dough balls into uniformly thick bases up to 20 inches diameter(or rectangular shapes) and avoid the risk of RSI (repetitive injuries syndrome) associated with constant dough rolling.

All models operate off 13 amp supply and have adjustable rollers and removable scrapers.

Compact bake-off The Mini oven from Amcott Bake-Off Supplies can bake off 20 half-baguettes in 10 minutes. Price is £750. The company can also supply the Midi oven with a capacity of three 600 x 400 trays and the Maxi (4 trays) at £990 and £1400 respectively. Ovens have time indicators with alarms and power cut-off and are available with stainless steel stands racked out to take baking trays.

Cuts sarnies fast For high volume sandwich production, an ultrasonic cutting machine by Millitec Systems claims to achieve perfect cutting every time, using a Teflon-coated titanium blade which vibrates at up to 20,000 times per second.

Sandwich thickness is adjustable up to 125mm. The unit can work at speeds up to 60 cuts per minute.
