Yau and Tang to open new restaurant at Dorchester
Award-winning restaurateur Alan Yau and fashion designer David Tang are going into business with a new restaurant at London's Dorchester hotel.
The new restaurant will open in June in the former Dorchester Club on Park Lane.
Hong Kong-based Tang is understood to be directing the joint venture with Yau overseeing food strategy, menu development and the kitchen.
Menus will be based on traditional Hong Kong cuisine, while interiors are expected to be in opulent Chinese style. Work on the project is understood to be already 50% complete.
The restaurant will be run independently from the hotel although the Dorchester is understood to be an equity partner.
A spokeswoman for the Dorchester confirmed the project was going ahead and an agreement had been reached with both Yau and Tang.
Tang said he couldn't confirm anything until next week.
Rumours continue to circulate that New York chef Gray Kunz will be involved in the revamp of the Dorchester's Terrace restaurant.
A hotel spokeswoman reiterated this week that the restaurant was to undergo a general review. "We are looking for a Michelin-starred chef, but it is too soon to say more than that."
The refurbishment of the Terrace is scheduled for early 2006.
