The Pilgrm
The Pilgrm hotel has opened in Paddington, London, a collaboration between Jason Catifeoglou, Andreas Thrasyvoulou and Steph Thrasyvoulou. The brand seeks to address modern travellers' needs by streamlining bedroom items and removing those no longer necessary. The design celebrates provenance and community: bedrooms feature reclaimed furnishings, from 200-year-old mahogany parquet floors to original cast-iron radiators. Additional bedroom features include organic mattresses handmade in Devon, 200-threadcount sheets and Marshall speakers. Former Grain Store sous chef Sara Lewis heads the kitchen at the 30-cover Lounge restaurant on the first floor, which will feature an open kitchen and bar. The informal menu will offer international dishes such as kimchi rice, tea-poached egg and condiments for breakfast, and mushrooms and Dolcelatte cheese toastie in the evening. There will be a café on the ground floor, in place of a reception area. Guests will check in online before arriving at the hotel.

Brighton restaurateur Razak Helalat has opened another Coal Shed, this time at London's One Tower Bridge, serving meat and seafood cooked over fire and charcoal. Ingredients are sourced as locally as possible, including fresh seafood from the south coast and organic British-breed meats.

The Perception
The Perception bar and lounge has opened at the W London Hotel Leicester Square. The bar features neon artwork, a giant glitter ball and a revolving sofa with tiered seating, all in a colour palette of black and gold. The events calendar features DJ sets and a dining series.
