I worked at my uncle's brasserie in Strasbourg when I was 15. He didn't pay me

What do you normally have for breakfast?
Something different every day
What do you do to relax?
I have a house in the country, in Waccabuc, about an hour from New York, where I go and do nothing

What is your favourite restaurant?
Marea in New York

What is your favourite hotel?
Amandari resort in Bali

What is your favourite drink?
Sake

Are there any foods/ingredients that you refuse to cook with?
Zoo food - anything you see in the zoo I refuse to cook

If you had not gone into catering, where do you think you would be now?
I would be a designer or architect

What do you always carry with you?
My iPhone

How would you describe your desk?
On top, super tidy. In the drawer, the biggest mess you've ever seen

Which person in catering have you most admired?
Party planner Colin Cowie - he organises the best parties

What daily newspaper/website do you read?
The New York Times

Cast away on a desert island, what luxury would you take?
A big can of caviar. I'd have a spoonful every day

Where was your last holiday?
St Barts, where I have a holiday house

Every night I eat a piece of chocolate after I have brushed my teeth. I fall asleep with it in my mouth

What's your favourite film?
Tampopo

Who would play you in a film about your life?
Robert De Niro

What's your favourite music?
I enjoy silence

What is your favourite prepared food product?
Japanese mayonnaise

Who would be in your fantasy brigade?
I would get two chefs each from China, Japan, Italy, France, Spain and Africa - a UN kitchen. You would not have to travel and could eat something different every day
