Mathilde Bouvier named head chef at the Buttery at Lime Tree hotel

Mathilde Bouvier has been appointed head chef of the Buttery restaurant at the Lime Tree Hotel in London's Belgravia.

She has over nine years' experience in the industry, including a role as head chef at Rose Bakery in Dover Street Market in London's Piccadilly.

For the past two years, she was head chef of Brother Marcus in London's Borough Market.

Bouvier will be supported by newly appointed sous chef Elvi Ramadani, who also joins from Brother Marcus, in the delivery of the Buttery's breakfast, brunch and lunch menus.

She will serve modern British classics with an "Ottolenghi-style twist", such as green shakshuka; smoked roasted aubergine with babaganoush, feta and pomegranate served on toasted sourdough; and kimchi fried chicken with spicy avocado and picked cucumber and chilli.

The Buttery revealed plans to relaunch a sharing-style menu for dinner towards the end of the summer.

Bouvier said: "I am incredibly excited to be working closely with such a lovely team and am eager to develop the already fabulous menus and gastronomic offering at the Buttery."

Matthew and Charlotte Goodsall, who have owned the 26-bedroom Lime Tree Hotel for over a decade, added: "We're absolutely thrilled to welcome Mathilde and Elvi to the team and look forward to a new chapter ahead under Mathilde, a passionate and very talented chef with exciting plans for the Buttery."
