Paul Foster to champion grass-fed beef in first London restaurant

Michelin-starred chef Paul Foster will open his second restaurant GrassFed in London's Camden later this month.

Foster opened his first restaurant Salt in Stratford-upon-Avon in 2017, securing a Michelin star less than a year after its launch and the Newcomer of the Year Catey in 2019.

GrassFed will champion the best quality grass-fed beef, with meat grilled over coals in an open kitchen. All cuts will be served, from prime-rib to ox cheek with highlights including a beef hotdog with truffle mayonnaise, crispy onions and pickled onions as well as beef rib served on the bone to share, with a choice of Cotswold Sobrasada and Stichelton blue cheese.

The 50-cover restaurant will also serve seasonal British fish and vegetables, with a drinks menu featuring classic cocktails, British beers and a mix of English and European wines.

Foster said: "This is something I've wanted to do for a long time. It won't be a run-of-the-mill steak restaurant with chips and peppercorn sauce, I want to showcase the best of British produce and bring something different to this segment of the market. We're using high-end ingredients and serving them in an approachable environment at a fair price point."

The chef's passion for GrassFed comes from a desire to change the narrative around meat consumption and raise awareness of the benefits of regenerative farming.

The interiors of the restaurant draw on materials such as wicker, steel and stones, which will sit alongside copper tones on the walls. GrassFed will also offer outdoor seating for those wanting to dine canalside.
