Marinades and glaces from Major International

Caterers can quickly turn a classic roast chicken into a flame-roasted dish with Major's Liquid Seasoning Chargrill liquid marinade.

The seasoning, supplied in 500g bottles, can be brushed or spooned on to fish and vegetables or added to mayonnaise, oils or crème fraîche to create dips, sandwich fillings, wraps and dressings.

For a velvety glazed finish to dishes, Major offers Major Glace reductions in beef, chicken, vegetable and lamb flavours in 500g pots. The water-based Glaces can be blended with oils and spices for a finishing warm drizzle or can be added directly to stocks, sauces, meat juices or reductions for an intense flavour hit.

Also available are Mari-Base marinades in Tandoori, Oriental and chilli-based Piri Piri flavours. The marinades, supplied in 1.25-litre bottles in cases of two, are a blend of herbs and spices to create aromas and flavours of Indian, Oriental and Portuguese cuisine for stir-fries, dressings, dips, wraps, soups and sandwich fillings.
