North Stars – preview of the Northern Restaurant and Bar show 2009

About 200 exhibitors will be showing their wares at this year's Northern Restaurant & Bar in Manchester, Here's a selection of what visitors will find.

1. Liqueur combination
(Stand 634)

The idea of combining the flavour of two Italian favourites, amaretto and sambuca, was conceived in the UK by Straight Up Drinks and made a reality by Lorenzo Inga, fifth-generation distiller from Genoa, Italy.

The resulting Samburetto takes the richness of amaretto and combines it with the sweet anise of sambuca. The fusion of ingredients combined with a warming 38% abv provides a totally different liqueur experience, claims the company, which expects Samburetto to have wide appeal, particularly as it is being launched at a time when both amaretto and sambuca are experiencing strong year-on-year growth (26% and 20% respectively).

Serving suggestions include "the Original" - served long with cola; and "the Usual" - served straight-up as a shot, as favoured by the traditional sambuca drinker.

Founded in 2008, Straight Up Drinks import premium liqueurs from Europe for the UK on-trade only.

2. Elegant tableware

Slides and Bloom Sun & Shadow are two of the latest collections from Villeroy & Boch's hotel and restaurant division.

Slides is a contemporary design that aims to introduce a unique way to serve food. The main "slide" remains on the table, and further plates and dishes simply slide directly on to the base at each course. There are a wide range of slides, including flat plates, platters and bowls, and personalised slides for company logos or corporate designs are also available.

For a fresh take on stylish monochrome, Bloom Sun & Shadow features contrasting black and white with a simple floral design. Glossy white plates, bowls and platters add light to their dark counterparts for easy mixing and matching, and elegant lines are mixed with interesting organic shapes.

Visitors to the stand can take advantage of various show offers, including a "buy 10, get two free" deal.

3. Compact coffee maker

Latte, cappuccino, mochaccino, espresso long, espresso short and hot chocolate can all be produced from the Bambino fully automatic bean-to-cup machine, which has an output of up to 60 drinks per hour. The machine is fitted with its own water tank to allow it to be positioned in a wide variety of locations with a small space requirement of 350mm width x 430mm depth x 780mm height.

The Bambino is suitable for many types of business, typically sandwich bars, hotel receptions and golf clubs, and can have a coin mechanism fitted to enable it to be used for customer vending.

4. Height of comfort

HandySitt by Danish designers Minui and available from Cheeky Rascals is a space-saving high chair providing convenient child seating without blocking serving aisles.

It folds flat, making it easy to store and carry, and it's easy to use and keep clean. Redesigned to conform to EU safety standards for a freestanding high chair, the HandySitt fits easily to virtually all dining chairs.

A new back rest provides comfortable support and doubles as a useful carrying handle, and for additional child support an innovative safety bar is supplied as standard.

The chair is handmade in Denmark from Forest Stewardship Council-certified birch wood and comes with a three-year warranty.

5. Spicy blends

Pure Experiences
Pure Experiences is a range of herb and spice blends from Dutch ingredients company Verstegen Spices and Sauces. The blends consist of peppercorns and other exotic herbs and spices combined with ingredients such as dried fruit pieces, cacao beans, varieties of seaweed and fragrant lavender.

The flavour profiles have been developed in three distinct categories: Fruit Peppers flavours are Arabiatta, Garlic Shallot, Harissa, Seaweed Lavender, Seaweed Lemon, Seaweed Garlic Shallot and Wild Mushroom; Season Peppers are Banana Moon, Forest Fruits, Lemon, Orange and Strawberry Lemon; and Cacao Peppers include Allspice Raspberry, Maniguette Aniseed and Szechuan Orange.

They can be used simply as a garnish or as a seasoning in numerous dishes, including giving a new twist to favourites, even desserts. Many of the 15 varieties are available as ready-to-use spice grinders.

6. Light and dark

Czech brewer Budweiser Budvar will feature its Half and Half, which consists of draught Budvar Original and draught Budvar Dark mixed together. Budvar Original is the golden 5% abv brew placed by Nielsen in the top 50 drinks in the UK on-trade, while Budvar Dark is a 4.7% abv retro beer designed by the brewery to taste like all lager-conditioned beers did before they were turned golden in the 1840s.

A mixture of the two produces a third distinctive drink described as "tasting like a very superior mild and bitter".

Operators listing Original and Dark in draught form can now get both drinks stylishly on the counter in the form of the specially designed Budvar duo font. The font has a third, middle-position tap that can be easily activated by anyone wishing to offer Half and Half in a consistent and trouble-free way.

7. Feel the burn

Lumea Chafing Fuels have been designed to address all food and beverage heating needs, including beverage urns, soup tureens and chafing dishes, delivering a cost-effective, safe, high heat time after time. They are a new addition to the product range from Lumea, which was founded in 2002 to sell its Liquid Wax Candle Lamps direct to the hospitality sector.

The range includes super-hot ethanol chafing fuel with a burn time of two hours, rapid heat-up, consistent heat output and a no-spill gel formula made from renewable resources. There's also long-burning wick chafing fuel with a choice of a four-hour or six-hour burn time, consistent heat output, spill-proof design and a visible flame.

Lumea is now an international company based in Hong Kong with factories in China and India and distributors around the world.

8. Glowing review

Flavaz Shots are pre-potted mixed fruit-flavour alcohol shots in unique pots made with ultraviolet pigments that glow underneath UV lights in nightclubs and bars.

Flavours available include Blueberry, Raspberry, Cherry, Apple, Sambuca, Tequila, Cranberry, Banana, Piña Colada and Cosmopolitan in 25ml servings and an abv of 14.5%.

Particularly useful in venues where customers are several rows deep at the bar waiting to be served, the product can be taken around a venue by floor sellers, providing extra incremental sales.

9. Double vision

Cater Control
Control CCTV specialises in the specification and installation of digital closed-circuit TV (CCTV) systems. Its Cater Control package offers remote access, even via mobile phone, advanced data retrieval and ease of use, along with meeting licensing requirements such as a minimum 31 days' recording.

The package has now developed further to offer electronic point of sale (EPoS) and CCTV integration, whereby EPoS text overlay is printed over the CCTV video as the transaction is entered into the EPoS terminal, and - in conjunction with Control CCTV's approved EPoS partners, iControl Hospitality - CCTV can now be viewed via the EPoS terminal.

The application provides invaluable protection, monitoring products being delivered as well as giving management an overview of the site via the EPoS terminal.

The system also supports alarm notification via text, e-mail and audio; full remote access; object counting; face finder and two-way audio.

10. Local attractions

iKnow Yorkshire
The iKnow accommodation listing websites were launched five years ago, since when the regional sites have welcomed 20 million visitors, generating 1,500,000 booking enquiries for the UK tourism industry.

The plan now is to use the sites to market local attractions, including restaurants, pubs and cafŽs, to allow smaller businesses that have historically been able to afford only local promotion to target people from across the UK and international visitors who are planning trips to their area.
