Brakes' Salmon Mousse with Mustard & Dill Centre has been entered in the Starters, Side Orders and Buffet Products section of Caterer's Excellence in Food and Drink Awards 2009.

This wonderful starter option is made up of salmon that has been smoked over oak and beech logs to develop its wonderful flavour, then combined with kiln roasted salmon to create this creamy mousse. The mousse then surrounds a soft centre of mustard and dill and whole dish is hand-finished with a piece of the finest D-cut Scottish Highland Smoked Salmon. The great provenance of the salmon combined with the excellent flavour and visual appeal makes this product a favourite on any menu.
