UK-farmed Tilapia and Cornish red gurnard from J&J Seafood

M&J Seafood champions two British-reared varieties - tilapia and Cornish red gurnard - as sustainable alternatives to endangered varieties.

Its tilapia, originally from the Nile, is farmed in East Anglia and Cambridgeshire to provide a longer shelf life and reduce the carbon footprint from imported fish. Both red/orange and black varieties provide a firm, white flesh with a neutral taste that partners well with stronger flavours and accompaniments.

Cornish red gurnard spawn in spring and early summer and are sold fresh between August and March and are frozen in their prime to provide fillets all-year round. The tight, firm flesh has a distinctive flavour and holds together well in soups, stews and bouillabaisses.
