Wild game seminars at Westminster Kingsway College
Westminster Kingsway College's School of Hospitality and Culinary Arts is holding two seminars on the different species of wild game available to chefs in the UK and the various methods of cooking involved.
Game Recognition and Preparation will take place on Monday 24 November 2008 and Thursday 29 January 2009 at the college and are open to those studying or working in the hospitality industry.
The seminars, sponsored by the UK Game Company, will be given by chef lecturer and game expert, Jose Souto and bring together examples of all types of game as well as an insight into where game can be found, what they eat and what makes them special for British menus.
"People are now eating more game than ever because of the work of organizations like the Countryside Alliance and Game to Eat, who are promoting game as an easily useable and readily available commodity," said Souto.
The cost of the game seminar is £60 per person to include full day of lectures, lunch in the college's Vincent Rooms and a colour copy of a booklet written by Jose Souto on Game Preparation and Identification.
