The Swan in Bampton, on the edge of Exmoor, has appointed Olivier Certain as its new head chef.
He joins the 60-cover gastropub, owned by Paul and Donna Berry, from the nearby Clavelshay Barn near Bridgwater.
Marseille-born Certain (pictured right), who was crowned Somerset Life’s 2017 Best Chef, will be joined in the kitchen by new recruit Finn Hutchinson (pictured left) who previously worked at the Michelin-starred Masons Arms at Knowstone in Devon.
Donna Berry (pictured centre) said: “We’re delighted that Olivier has joined us. He brings with him a wealth of knowledge and expertise, and really compliments our style here, as does Finn, who is also an exceptional young chef.”
However, she added that she and her husband Paul, who is chef-patron, would not be taking a back seat and would continue to develop the menu and the offer.
“The pair will very much work alongside us and you’ll continue to see us both in the kitchen, at the bar and front of house generally,” she said.
