A restaurant serving carefully selected gourmet European sausages is set to open on Islington’s Upper Street.
X-Upper’s menu has been developed by chef James Tanner, co-owner of the Kentish Hare, Royal Tunbridge Wells and Francesco di Marzio, former executive chef of two-Michelin-starred the Greenhouse in London. The pair are using ingredients selected from tastings of 513 sausages across 14 European cities.
The menu will feature six core sausages including the Olma Bratwurst, a protected Swiss bratwurst served with a signature purple mustard, pickled cabbage, and milk and honey sourdough. In addition to which daily specials such as an Austrian Käsekrainer and smoky Polish Kielbasa will be offered.
Managing director, Mariam French, said: “We’re so excited to be launching X-Upper. Forget what you think you knew about sausages! Sausages, in their many forms, are loved and consumed by millions of people. Through our travels around Europe, we uncovered a set of amazingly delicious and high-quality sausages and I can’t wait for Londoners to be exposed to the richness of our yummy products. Our mission is to completely re-invent the perception of sausage through serving authentic, high quality, local provenance sausages that are true delicacies.”
X-Upper will open at the beginning of March.
