Baked Papaya and meat dish – by Michael Connor

INGREDIENTS

1lb lamb or kid minced
2 green papaya
1 onion finely chopped
1 clove garlic crushed
6oz tomato concassé
1½ oz cheese grated
1 red chilli
1fl oz oil
Bunch parsley chopped
30fl oz light stock
Milled salt and pepper

METHOD

Cut the papaya in half lengthways and remove the seeds. Heat the oil and sweat the onion and garlic. Add the meat and cook until lightly brown then add the tomatoes chillies and seasoning. Continue to cook for another five minutes then mix in the parsley. Fill each of the papaya halves with the meat and place in a baking tray. Pour in sufficient stock to half cover the shells and then bake at 180ºC for one hour. Sprinkle with 1oz cheese and return to the oven for 30 minutes. Remove sprinkle with the remainder of the cheese and serve.
