Take Five ovens and ranges

15 December 2010 by

The oven is the engine room of any catering operation, as well as probably the biggest single investment a business makes in equipment - so getting it right is essential. While the traditional open top range remains a popular choice, the days of a one-size-fits-all standard issue model are over. Chefs can increasingly select from a wide range of cooking methods and features that allow them to tailor the chosen model to the style of the menu. We put the spotlight on five models which meet a "range" of needs.

Falcon E711 General Purpose Countertop Oven

We say
A great choice for kitchens where space is at a premium or a complementary oven is required. The small footprint allows it to be mounted either on the counter or on the optional stand. The E711 is supplied with three shelves which can be fitted in multiple positions

Menu System Multifunction Induction Hob

We say This induction hob can be specified with either one, two or four zones. While the size of the unit remains the same, the zones can be configured to suit the chef, delivering the power, control and energy efficiency of induction cooking

Josper charcoal oven/grill

We say The Josper is an enclosed barbecue which also doubles as an oven. It produces tempting flavours and aromas by combining the features of an enclosed oven with charcoal grilling. La Petite Maison and the Savoy Grill both have one, as will Dinner By Heston Blumenthal when it opens

Features â- Faster cooking times
â- Cooler cooking environment
â- Visual impact in theatre kitchens

Dimensions (model HJ-45) 1320mm (H) x 930mm (W) x 700mm (D)

Rational SelfCooking Center combi oven

We say The latest versions of Rational's SelfCooking Centers never need descaling, don't need a water filter and clean themselves when they need it, thanks to the ‘CareControl' system. The ovens automatically cook any type of food using the best method, delivering great results every time.

Features â- Environmentally-friendly biodegradable descaling tablets
â- No lime scale build-up means optimum efficiency, saving running costs

Energy With energy prices rising, factor these costs into the buying decision. A faster heat-up time will cut overall energy use

Running costs Factor in all the variables, not just energy. Steamers and combis may need a water treatment system; some ovens may need more complicated servicing than others. A higher priced unit that runs more economically may ultimately be better value

Look after it Proper care and maintenance will lengthen the life of your oven and ensure it's always operating efficiently

The right choice Focus on what you want your oven to do. Base your choice on the menu you plan to cook in it

Training Ensure the supplier offers full after-sales training support, and is willing to train the staff who will be using the oven - this may take more than one session
