Tomato and basil sauce

Ingredients

1tbs olive oil
1 onion finely chopped
2 cloves garlic finely chopped
2lb tomatoes chopped
1 fresh bay leaf
1oz fresh basil torn into small pieces
Freshly ground black pepper.

Method

Fry onion and garlic in oil until translucent. Add tomatoes and bay leaf season with black pepper and cook over a medium heat for 15-20 minutes or until reduced and well combined. When cooked remove bay leaf and add fresh basil.
