I was glad to see Bill Knott (Opinion, Caterer, 10 August, page 18) discussing the water issue.
We used to provide tap water on every table, but we found it was time-consuming, used a lot of ice, breakages and storage of jugs became a problem and it didn't really look right on the tables.
Now we give the first bottle of water free. Customers appreciate this, it's more convenient for us and tables with more than two covers tend to buy at least another bottle.
