The 70-cover, three-storey site will be on Conduit Street, and will be operated by Japanese agricultural co-operative the Zen-Noh Group. Michelin-starred chef Yoshihiro Murata, who holds seven stars across his three restaurants in Tokyo and Kyoto, will oversee the menu, aiming to offer modern, authentic Japanese food.
Dishes have been inspired by the wa-shoku tradition, using classic Japanese ingredients such as wagyu beef, alongside a drinks menu of sake, shochu and whisky.
The space will also feature an open kitchen, Josper charcoal oven, and robata grill, and there will also be a private dining room for up to eight people. Designer Yasumichi Morita will create the interiors, which will aim to reflect the brown and gold colours of Japanese festivals, shrines and temples.
Often recognised as an expert in the umami taste, Murata has previously collaborated with top chefs including Ferran AdriÁ , Alain Ducasse, René Redzepi and Heston Blumenthal. He is the third generation owner chef of his flagship Kyoto restaurant, Kikunoi, and is also chairman and director of the international Japanese food ambassador organisation, the Japanese Culinary Academy.
Established in 1972, the Zen-Noh co-operative group comprises 1,302 unions as part of its membership, helping in the production, distribution and sales of products. It recently opened a London office after the opening of the EU to wagyu beef, as a means to promote the premium product throughout Britain and Europe.
