Liquid Clarified Butter from Valrhona - a new addition to the H&B Foods product stable - will last for up to one year if stored in a cool, dry spot and is a versatile addition to the commercial kitchen.
Made from 99.9% butterfat, with the flavour of fresh butter, it liquidises from 17°C upwards and can be used straight from the tin without melting.
It is ideal for preparing emulsified sauces, as it contains no water; acts as a texturing agent to deliver more supple and stable biscuits, ganaches, cakes and crème mousselines; and is also good for frying, roasting and baking.
The butter, which has only been available to the gourmet market in the past, is sold in 2kg tubs.
