Brakes launches high street style sandwich bar concept for school caterers

Brakes Group has launched a sandwich bar concept modelled on branded high street sandwich retailers and aimed at school caterers.

Substop is the result of focus group research carried out with secondary school students which indicated that they want their school meal offering to be similar to those available on the high street.

The concept consists of branded merchandising packs - including a chalkboard, swing sign, packaging, labels, aprons, baseball caps and laminated stickers - to transform canteens into a Substop ‘store'.

A Substop operations manual is supplied free of charge to catering managers to help implement the concept.

Brakes offers a full range of chilled fillings including chicken, bacon and sweetcorn mayonnaise; traditional ham salad; coronation chicken; and spicy meatballs, and a fully baked and pre-sliced deli sub roll.

The concept is currently being trialled in secondary schools throughout the London Borough of Barking & Dagenham and will officially be launched at the Local Authority Caterers Association (LACA) exhibition in July.
