The new pasta cookers from Imperial allow chefs to prepare pasta quickly thanks to its construction from 16-gauge 316 alloy stainless steel, which is superior to marine grade and therefore allows higher concentrations of salt in the water.
Available in 45- and 61-litre capacities, the cookers transfer heat evenly and utilise an extensive water-wash system that removes starch uniformly across the surface of the water with minimal foaming.
This system, combined with the tube design, allows fresh hot water to recirculate naturally through convection.
The cookers come with either a manual timer or computer controls and the range of optional extras include basket racks, automatic basket lifts, and swing-arm hot and cold faucets.
