The new NXT Generation combis from Electrolux Professional, equipped with air-o-system technology, combine the benefits of the company's air-o-stream combi-ovens with its air-o-chill blast chiller/freezer technology to provide an integrated cook-and-chill unit.
The line is available in gas and electric models in half and full sizes, with the options of six, 10 or 20 racks. The three cooking modes operate under the patented Lambda-sensor driven air-o-clima process to control humidity and reduce food weight loss, while the preprogrammed low-temperature cooking cycle is said to reduce meat weight loss by as much as 50%.
Cooking features include a six-sensor probe that uses the lowest reading to stabilise temperatures above the danger zone, an automatic self-cleaning system, and an energy-saving half-power setting. Gas models use high-efficiency burners that can reduce energy bills by 20% and dangerous nitrogen oxide emissions by 20%.
On the cold front, the air-o-chill system can chill food from 90°C to 3°C in less than 90 minutes and freeze it from 90°C to -18°C in less than four hours.
To prevent overlong chilling or freezing cycles, the air-o-check system ensures that the core probe has been correctly inserted and calculates the best cycle time by comparing readings across five points along the probe.
