The Novel Group, owner of H&B Foods, has substantially increased its range of speciality cheeses following its acquisition last month of independent wholesaler the Cheese Cellar Company, which brings the combined speciality line to more than 400 cheeses.

Recent additions to the H&B catalogue include four cheeses from leading cheesemaker Philippe Olivier that are exclusive to the food service market. Two are made from raw goats' milk and sold in 200g weights: Mothais, a mild and unusually moist goats' cheese, and the tower-shaped Charolais from the Bourgogne, which is slightly salty and sweet.

St Philippe is an unpasteurised cows' milk cheese sold in 420g sizes, while St Nectaire AOC, made from the Salers breed of cow, has a distinctive aroma of "dark, humid cellars" and is supplied in 1.6kg weights.
