Accurate temperature control at the point of cooking is essential to get the most consistent, high-quality cooking results. The griddle section of high-volume restaurants in particular could be serving 300-400 covers per day and consistent temperatures ensure even cooking every time a steak is placed on the griddle.
With conventional refrigeration, repeated door openings to fetch meat for cooking will almost certainly lead to temperature fluctuations, especially in the high ambient temperatures found in many kitchens during service.
