What was your best subject at school?
Both English and drama
What was your first job in catering?
The first time I worked front of house was when I was 11 in my family's restaurant, and then the first time in the kitchen was many years later at 28 running pop-ups with my mum
What do you do to relax?
Nature, cinema and the rave

Estela in NYC, St John in London
What is your favourite drink?
Vermouth and tonic
What is your favourite food/cuisine?
It's very difficult to choose, but the food of my family and the memories it carries is hard to beat purely for nostalgic reasons. So I'll have to say Italian, but I love Turkish and Mexican a lot
Which ingredient do you hate the most?
Fake truffle oil
Are there any foods/ingredients that you refuse to cook with?
I don't get on with tripe at all
What do you always carry with you?
A lighter and a scrunchie
Which person in catering have you most admired?
My mum (who is also a chef)
If you had not gone into catering, where do you think you would be now?
On a farm
Describe your ultimate nightmare?
A right wing, totalitarian government with no care for the world and its people
When and where was your last holiday?
Bologna, a few weeks ago. My sister lives there and it's also close to where we grew up so I love going back
What's your favourite film?
It's a close tie between Moonstruck, Ponyo and Sweet Bean
Who would play "you" in a film about your life?
Fran Dresher (I wish)
What is your favourite prepared product?
Frozen dumplings
