We delve into the life and inner thoughts of a top chef. This week: Jamie Guy, head chef at the Gallivant in Camber, East Sussex

What was your best subject at school?

Art, I went on to study sculpture at Norwich School of Art and Design

What was your first job?

My dad was in the army, so my first proper job was during the summer holidays in the army kitchens in Berlin

What do you normally have for breakfast?

Black coffee and Marmite on toasted sourdough or a crumpet

What do you do to relax?

I have a young son and spending time with my family is important. Living by the coast we walk a lot and I'm hoping to learn to sail this year. I'm also a newbie to yoga since joining our weekly team class at the Gallivant

Which is your favourite restaurant?

Locally, the Royal in St Leonards on Sea, and in London it's St John. I like to sit in the bar and always order the bone marrow and Welsh rarebit. I recently ate at Manteca in Shoreditch and loved every bit of it, I hope it's around for a long time

What is your favourite drink?

A Negroni or Margarita are my favourite cocktails. I love wine, and at the Gallivant we have one of the largest English wine menus in the country, so I'm very lucky to be able to visit and taste some incredible wines produced on our doorstep

What flavour combinations do you detest?

There isn't much that I won't try. And there certainly nothing that I absolutely dislike except jellied eels. I have tried them a couple of times now and I'm afraid it's a hard no!

Which person in catering have you most admired?

Fergus Henderson, for his singular vision for a restaurant that has stood the test of time

When and where was your last holiday?

Mallorca last summer. I managed to get to Eddie Hart's El Camino for a great lunch. I will definitely be going back to explore more of this island

Tell us a secret...

I'm a sucker for fast food

When did you last eat a hamburger?

Smash burgers are a firm family favourite. My son insists on them and enjoys helping make them. We probably have them weekly

What's your favourite film?

Pulp Fiction. I'm a huge Tarrantino fan. I would love him to write a film about this industry.
