What was your best subject at school?
Food technology. I cooked duck with raspberry sauce and gratin potatoes. I was 13. I became the teacher's pet
What was your first job?
My parents owned a greengrocer's. I would go to the market with my dad at 1am, get back to the shop and start cooking the beetroot ready for the morning shoppers
What was your first job in catering?
At the Moat House in Brentwood, Essex. It had two rosettes at the time and I look back at it with fond memories. It wasn't a bad place to start at the age of 15

What do you do to relax?
I play football with friends, and there is nothing like a good bottle of wine and a movie

I love Roka on Charlotte Street in London

I have stayed at many Ian Schrager hotels, but the best memories are from the
Delano in Miami

Marzipan with anything

Many people, but I don't get hung up on others and their achievements, I just concentrate on myself

Ian Schrager. I love his story and what he has done in his career

Tom Hardy - we are very similar

An architect or in design

The lack of quality with staff and the attitude of youngsters who come into the trade
