Martin Williams' M to launch dedicated sushi bar
M, the restaurant from former Gaucho managing director Martin Williams, is to launch a dedicated sushi bar.
The City of London site, which comprises two 90-cover restaurants named M-Grill (meat) and M-Raw (fish and raw items), is set to open a bar station serving sushi, on small plates designed to share. It will focus on quinoa sushi, with fillings including swordfish and tuna.
The bar was previously not used by the public and was only used by the chefs to prepare certain dishes.
The new summer sushi menu will open next month, and has been created by executive chef Michael Reid, and head chef Jarad McCarroll, who joined M in October from Nuno Mendes' Chiltern Firehouse, in London's Marylebone. The choices will also include homemade South African-style biltong, kangaroo, and boa buns, plus a Volzhenka beluga platter featuring lobster, a vodka crème fraiche, caviar, and Champagne jelly.
The site will also serve Blackmore Wagyu sirloin steak, available as a sashimi and on the ‘hot stone' section of the menu.
M, which opened in December 2014 on London's Threadneedle Street, also has a wine and cocktail bar, plus a number of private dining rooms and a VIP room named the M Den.
The group recently announced that it had secured a second venue six months ahead of schedule, allowing the company to fast track its expansion plans.
Commenting on the new sushi bar, Williams stated that its new menu would serve high protein, healthy dishes.
He said: "We have gained a great reputation in a very short space of time. [Reid and McCarroll] are the kings of creating the most beautiful foods, which are both taste sensations and complex in textures."
