Gaucho has experienced an uptick in business heading into the end of the year after a tumultuous period for the firm.
Across November the firm experienced an 8% growth in covers year on year, while also advancing with a string of new hires – including new executive chef Max Castaldo.
Born in Argentina, Castaldo joins the company from the Lanesborough hotel, which includes the one-Michelin-starred Celeste restaurant, where he served as head chef under Éric Fréchon.
Castaldo’s previous kitchens include Nobu, Rosewood London and Sushisamba.
As well as the chef, chief executive Martin Williams has employed Ross Butler as the brand’s managing director, taking the position from Dubai where he founded his own consultancy.
Williams said: “We are delighted to see that nearly 80,000 diners returned to Gaucho last month to try the new higher quality, lower priced menus and see our investment in heightened hospitality.
“The feedback from our guests has been amazing and we are enjoying welcoming.”
