Frying without fat with Valera

Caterers can produce healthier crispy snacks - such as chips, French fries and scampi - using the new fat-free Quik n' Crispy fryers from Valera. The system uses hot air rather than oil to cook oven-ready products and the manufacturer says it allows a combination of foods - such as chips and onion rings - to be cooked simultaneously without any transfer of flavour. Unlike traditional oil fryers, the Quik n'Crispy does not need an extraction system and caterers are spared the costs of disposing of used oils. The fryers use programmable presets and come in two- and four-basket sizes that require 13amp and 30amp supplies respectively. The dimensions are 340mm high x 530mm wide x 502mm deep and 527mm x 742mm x 537mm.
