Gastronorm pan from BGL Rieber
Stainless-steel gastronorm pans rarely make the news, but latest versions from leading German producer Rieber are made from a 2.3mm thick, seven-layer metal which includes stainless steel, chrome and aluminium.
This permits buckle-free direct cooking - grilling, frying, baking and roasting - as well as the usual preparation, storage and meal distribution applications.
The new "cooktainers", made in 1/1 size and available with stainless-steel lids, feature rounded corners and sides and are claimed to be the first all-purpose cookware in stainless steel gastronorm format. One application is on Rieber's Varithek mobile front-of-house cooking unit with built-in ventilation system, which offers the ability to griddle, wok, fry, make crêpes or provide a full hot-plate buffet.
Also being launched is the Thermomat cook-and-hold oven in door and drawer versions, suitable for handling joints of meat and other items which need to be kept warm, reheated or cooked at low temperature. Precise thermostatic control - to a claimed plus or minus 1°C - operates in conjunction with finely distributed heating filaments to compensate for fluctuations caused by frequent opening of the door.
